Weekend recap

Happy Monday!  I’m OK with today being Monday since it’s a short week.  I NEED a short week.  Did I mention need?  🙂

Thankfully it was a great weekend and up until yesterday around 5pm, it felt like a long weekend.  Then at 5 I realized it was ending and would have to go back to work in a little over 12 hours.  No fun!

Friday I went out for drinks with a friend.  For some reason whenever we hang out, we start out good but end up feeling tired and calling it a night on the early side.  Without fail this has happened the past few times we’ve hung out.  Therefore we decided the next time we go out it has to be earlier, so maybe a football Sunday or just a late afternoon get together.  Anyone else have this problem?  I’m getting old 😦

Saturday we had a little pizza party.  My friend and her bf came to visit and DJ of course went to town.  I took a few pictures on my phone but periodically my phone decides to eat those pictures for a few days and then they’ll magically come back.  We had some shrimp tempura as an appetizer, then some roasted brined pork ribs as a second appetizer, and then the pizza fest started.  DJ typically makes one pie at a time, we eat it, and then he makes another.  We must have been eating for several hours on and off on Saturday.  It was lovely.

In addition, my friend brought some wonderful cookies!!  She just sent me a link to the recipe and it’s too good not to share.

They’re S’mores Cookies!!

I’ve transcribed the recipe here but you can also click on the picture to go right to the source.  If you like chocolate chip cookies and s’mores, you will love these!

1 package graham crackers (9 full-sized graham crackers)
6 T butter, melted
1 T sugar
dash salt
1 C butter, softened
2 C brown sugar
2 eggs
2 T milk
2 t vanilla
1 t baking soda
2 t baking powder
1/2 t salt
3 1/2 C flour
2 1/2 C milk chocolate chips
24 large marshmallows
4 small 1.55 oz Hershey bars

Break the graham crackers into pieces. Place them in a small food processor and grind them into crumbs.

To your crumbs add 6 T melted butter, 1 T sugar, and a dash of salt. Use food processor to mix all together and then set aside.

Place your softened butter and brown sugar into a large mixing bowl. Beat on medium speed until the ingredients are nicely creamed together, about 2 minutes.  Add your eggs, milk and vanilla and mix for another 2 minutes. In a separate bowl combine your baking soda, baking powder, salt and flour. Add it to your creamed mixture and mix until combined.  Toss in your chocolate chips and mix yet again, just until the chips are evenly distributed.

Grab your graham cracker crumbs and pour them into the cookie dough. Using a wooden spoon, or your hands :)  smash them into the cookie dough.  (You don’t want to mix them in too much.)

Roll the dough into 2 inch balls, place them on a lightly sprayed cookie sheet and bake at 350 for about 6 minutes, or just until the cookies begin to crack.

While your cookies are in the oven, cut the large marshmallows in half.

Press a marshmallow piece into the center of each hot cookie. Return the sheet to the oven and bake for about 1 1/2 more minutes allowing the marshmallows to puff up.

Remove the sheet from the oven. Let the cookies sit for about 2 minutes, then press one Hershey bar piece into the center of the marshmallow.

Remove the cookies from the sheet and allow them to finish cooling on a wire rack.

Enjoy!

When these arrived at my house they were obviously cool. We found that throwing one in the microwave for 10 seconds warmed them just enough to make the marshmallow gooey and melt the chocolate a bit.

Seriously so good.

As a footnote, definitely not much on the “Fit” side of this blog lately with all these decadent recipes.  Oops!

Yesterday the Minnie had a doggie playdate that succeeded in totally wiping her out.  Score!  Poor girl was even hobbling around like a 90-year-old last night.  Guess the 9 month old 90 pound puppy wore her out. 🙂

And last, Fantasy Football.  This is my first year participating and while I’m not loving it, it does make Sundays a bit more interesting.  I have the Giants defense.  The Giants had a Bye this week, so in a last-minute rush, I picked up the Bills defense.  They scored 19 points on Thrsday night which is awesome.  However I never actually put them in as a started.  So they sat nicely on my bench and earned me 19 points.  DUH!!  SOmehow though I’m only 4 points behind with one player to go.  Fingers crossed!

    1. My friend was initially told that she was a pit mix. She may have some pitt in her but also a bunch of other dogs. They thought maybe ridgeback. Her shape is almost more like a wolfhound or deerhound. She’s tall and lanky with a very long tail…and full of energy.
